Late Update sorry.

The last test print was going fine no issues it did fail only because of a min bed temp issue I have had before with a faulty Heatbed thermistor cable, but i would still consider the problem is fixed. For other people facing the same issue I would first, you can disable the filament sensor in the menu so you can test print without using filament so no waste (This was suggested by Prusa)

Before starting the tests make sure you are using the latest version of sli3er and the latest firmware. 

1- Disconnect the USB cable (If it is attached) as that can cause the printer to reset as pointed out above by @-2 - Run a test print for me I used longer that 24hrs to see if it restarts
2- If it restarts then I would use a different/new SD Card a good quality one, make sure it is formatted to Fat32 - Run a test print for me I used longer that 24hrs to see if it restarts this should see if the SD card that could be causing the problem
3- If it still restarted I used a different slicer for me I used cura 4.7.1 and a different model - Run a test print for me I used longer that 24hrs to see if it restarts
4- If the printer restarts I would do a Factory reset, this will mean you will need to re-calibrate the machine - run a test print for me I used a print that was longer than 24hrs to see if it restarted

5- With all of the above done it starts to point to a faulty SD card reader so to rule out if the SDcard reader as the problem try doing a print via USB cable rather than SD card, again i used a long print 24hrs min

Now if the print succeeded it may mean the SD card reader attached to the LCD screen may be faulty if you are in your warranty period contact Prusa help for a warranty claim easy to replace. If you are out of warranty like me then it's not a cheap option.
If the printer restarted then it was also pointed out that the Ensi board could be the issue so follow warranty path if you have it.

If anyone has other suggestions or would approach the problem solving in a different order please add.
I ended up replacing the LCD screen and still had the problem but also had the USB cable attached when i disconnected it the problem ceased.

I had this issue and narrowed it down to ejecting the card via PrusaSlicer. If I close PrusaSlicer then just yank the card I have no issues.
