1st layer calibration does not match prints

My first layer has developed gaps between the strands of filament. I ran the 1st layer calibration and got the right level (I think) and the strands touch. But my prints still have gaps between the strands and don't match the calibration print.

I'm trying to attach a picture, but I don't see it in the preview....

How do you adjust the Z offset "live" while printing the 75mm square?

I am puzzled why the first layer calibration function gives different results than the Live Z adjustment. I'm getting good results with Live Z that  never would have gotten to from first layer calibration. This seems like a serious issue.
