Mines really stabilised after the advice here - really appreciated.
I’m about 100-200 hrs of printing after the new firmware (strobing tightening method) and gantry bend; so far without it complaining at all about being out of alignment. (Multiple power cycles etc)
Generally it’ll now do a couple of homing movements at corner, then just do its thing.
One thing to note is I had to do a factory reset after the new firmware install to get it to stabilise with calibration using strobing method for tightening.

I finished my assemble, except when doing the Y calibration test; it failed. I was informed to tighten the belt; I did just that to the point whereas the belt tore from the nextruder holder. I was surprised cause I tightened the screws well. How am I suppose to tighten, knowing there is a strong possibility that the belt tears off again ?
@Butters how did you tighten the screws? Are you turning the left and right screws by the same amount? If not you WILL bend the gantry to the point that Y calibration fails. I suspect that if you just blindly tighten you will get a severely bent gantry and I can imagine a scenario where the belt might get pulled out of the harness.
Also to @Jürgen's point, you have tendency to do "drive by" postings whereas we give advice and you never respond only to post again a month later on the same topic. So I'm assuming that you... finally... resolved your issue with the profiles?

I have disassembled everything but now my left Y-belt has so much excess that I can't solve as to why compared to before.

So you have removed the Nextruder and have access to its carrier plate, right? Are all four belt ends pulled through the slits to form that self-locking loop, with approx. 5 teeth sticking out on each free end?
See the photos in the assembly guide, here and here. Maybe you could share a photo how your carrier plate looks? Your initial report that the belts slipped out when tensioned has me wondering whether you might be installing them incorrectly.
Also, if you suddenly have extra belt length compared to your initial build: Is the belt still routed correctly around all the idler wheels, the tensioner and the motor pulley?
