Simplify3D
Is there any compelling reason not to stick with my Simplify3D slicer after I finish this MK3 build?

If you are happy with S3d and confident in creating good profiles,
there is no reason to change.
i have S3D and KISS Pro, both paid for.
but I use prusa slicer because it handles the Multi material options in a way that I can understand.
I have MMU1, MMU2 and Mosiac Palette2 Pro. so Multi material printing is important to me.

S3D works, it's just not improving
I started with S3D myself and it works just fine. I just found it tedious to work with and abandoned it (and my supposed "upgrades") a couple of years ago. If you're happy with it, it does a nice enough job. I would suggest experimenting with some of the other slicers just to see what new features are being supported now that S3D has essentially stopped development.
