Temp Calibration Real vs whats on the screen

I have been testing the temp readings on the Printer, if the accuracy as per the software matches whats really happening on the printer.

Here is what I came up with.

Printer Model: Prusa Printer i3 Mk2S
Temp Gun: Exergen DX501

The temp fun is pretty much one of the best temp guns for hobbyists it's not your cheap knockoff temp guns cross reference it online, if variance we are talking about 1 or 2 degrees at the most.

First Test The Print bed
Target Temp 70 on the software, I had to set the temp on the software to 79 to give me 70 degrees Celsius, various location on the bed major jumps inconsistent.

Second Test
I first wondered if my temp gun is off, but checking with my room temp display they are both within acceptable range. I know for a fact the temp gun was more accurate then the desk temp display. Ac is set to 23 consider ac compressor on and off cycle so within range.

Target Temp is 260 degrees Celsius, on the temp gun it shows 228 Degrees Celsius that a major difference to factor in whats really happening.

First of all, my question, my reading of the nozzle is directly on the nozzle from underneath at various angles, maybe am taking the temp in the wrong place but knowing where the ceramic cartridge heater is which is transferring the heat across via the block, that indicates to me am taking temp from the right place.

Second question, the prusa has a safety heat temp alarm, would it be wise to go beyond 300c in order to achieve the target temp. 😯

BTW the printer is enclosed case. Am not knocking the prusa, but shouldnt the temps match what we set, and if there is a variance then it should + 2 or 3 at the most in an enclosed case with no drafts.
