Mk2S to Mk3 upgrade

If I buy the full upgrade kit, Use the motors & LCD out of my old delta printer, with new lead screws, 8mm rods & bearings, print the MK3 parts. Do I end up with a new Mk3 and keep my Mk2s? Or will I need any other parts?

yeap, that is the rough idea, you just need to have extra 5 stepper motor and lcd panel, you will have mk2s and mk3

I'm kind of wondering why the whole new hotend for the upgrade? Couldn't they just replace the heater cartridge with a 24v version and save $50 or so?

It is often difficult to remove the ptfe tube, heater or thermistor. A new unit ensures this is not a problem.
With the redesign of the extruder. It is likely fthat the ptfe tube needs to be a different length.

When i tried to change my ptfe recently. I failed miserably. Luckily i had the remains of a previous extruder. And could scavenge the heatsink
