The 1.1 may be too high which could be why you get the clogged nozzle, but 1.0 is too low and hence you get the underextrusion. but the fact that it changes by making changes to the extrusion percentage makes me wonder if the firmware may need to be rebalanced for the change in the print plastics?

Judging by the spider threads on the filament you pulled, you have debris collecting in the teeth of the Bondtech gears.  You should check and clean the filament drive teeth in the two Bondtech gears.  If they are filled with old filament (from grinding) they will cause underextruding and you may not hear them skipping.

There are a multitude of mechanisms that cause extruder clogging & jams.   In some cases you'll need to remove the nozzle and force plastic out; some cases unloading them removing the nozzle and blasting the heat break with air to remove debris jams; sometimes a clog will form just below the PTFE and require a full disassembly.  Each has it's own unique cause.  So there's no single solution that fits all sources of underextrusion. 

That said, replacing the Prusa heat break with a stock E3D-V6 heat break has resolved all of my clog problems, so far.

To avoid extrusion issues I put a huge fan in front of my printer, increased temp to 220° and changed retractations from 0.8 to 0.4 .
I am not sure yet wich one of these parameters does the trick (I would bet the external fan), but I can now print in details without any issues.

Something that seems to be missed in the discussion: changing a nozzle requires the user to reset Z-Offset to zero before starting a Live-Z adjust.  If you don't do this step you risk damaging the bed if the new nozzle is "sticking out" more than the old nozzle. 

To zero Z-Offset, open up the Settings Live-Z and change it to zero after every nozzle change.  And yes, on my printer, the "Settings:Live-Z" is sometimes not there and I have to play games to get it to show up.

Setting retractions to 0.4 probably helped the most for the jams you were experiencing. Increasing nozzle temps 10c to 220c also helps reduce the frequency of heat break jams. So I'd conclude you are suffering the dreaded Prusa Heat Break jam.

The external fan helps part cooling in general, but causes the bed heater to work harder.   There is a lot of talk about the extruder motor heat creeping and causing jams, but this is usually pretty obvious: soft filament piles up just below the extruder gears above the PTFE tube.  An external fan should help that case.

On big flat surface models, the printer can go to fast, use a different print setting, where the speed is slower.

The infill speed of 180 or 200 is to fast, go to 130 or 100.

I had bad surface with this high speed, I had to slow down or heat the extruder higher temp.

 

If a print fails,

try slower speed,

different heat settings.

That looks like the correct part.  Though, I can't warrant it will fix your jams, but there is every indication it will help.  I am very happy I replaced my heat break.
