Well a week later $140 Aus and the replacement lcd screen with new card reader arrived and fitted and about 3 hrs into the print it restarted like before. So the problem must be something else and not the card reader.
I also used the new cables supplied and was vert careful when replacing the part and used the new SD card as well, so I'm a bit lost as to what to do next. Warranty finished in May this year.

Have you tried a different slicer?  I had an issue with a printer having off behavior.  It would ram the print bed every time it printed.  I switched from Cura to Slic3R and it magically went away.  I reinstalled Cura and now that slicer works also.  No idea what it was.

Hi charles-h13,

I did use cura 4.7.1 thinking the same on an earlier attempt to work out what's going on. I am going to try a different model (at least a 24hr print) use Cura 4.8.0 to slice and disable the filament sensor and run the print with no filament so I stop wasting it and print via USB tether as Prusa suggested to me in a support email.

I had similar issue but in my case restarts occured even when printer was idle, with no printing in progress. @the-mad-jedi is this happening in your case as well? 
After few days of talk with support their conclusion is that ensi board is malfunctioning. I'm going through warranty process to get new one.

I really only turn on that printer when using it and it was fine on a couple of small prints like a benchy or something small like that. but has started to happen on longer prints anywhere from 3 to 23 hrs into it. I have watched it happen too, it just goes to the prusa logo and then displays the idle screen no messages, warnings or crash reports. So far it is still running after been printing most of the day, the print is at 32% complete

@the-mad-jedi yep, sounds same. Typically I wouldn't have printer turned on for longer periods of time but because of this rebooting issues I wanted to make sure if it's connected to printing process or not. Hence the test on idle printer. Also I've checked with and without SD card as I read here it might be probable culprit - didn't change anything. Reboots happen always - sometimes minutes after turning on, sometimes hours 🙁

Hopefully replacing of the board will help...

From one who has been bitten, don't throw your money away on cheap no-name memory (flash or SD). Bit the bullet and get something solid and quick eg. SanDisk SD Extreme PRO.

I already had the problem - printer resets during printing. The printer stands in an enclosure. The reason for the reset was electrostatic charges on my part. As soon as I touched anything on the printer, it reset (IEC/TR 61340-1).

I quit using memory cards 2 years ago.  I use octoprint

Update-
So far it's still printing via usb cable connection for a little over 24hrs is at 70% done and no issues (Not using filament). I also only use good quality cards currently sandisk as well.
@charles-h13 I will look into octoprint, thanks for the sugestion

Have you ever checked the power supply? It is possible that it does not supply enough voltage when the current is too high (nozzle and bed heater switched on).
Have you possibly installed a MMU2? Is the firmware up-to-date? Maybe a factory reset will help.

UPDATE - 
I ran a print via USB that ran for 1 day 12 hrs 32 mins and it did not reset the print completed, which is interesting.
I have done a factory reset and will run the Destiny 2 bust print I've been wanting to do with filament loaded and see how it goes and update the conversation.

I have not installed a MMU2 and have the latest firmware.
I have just done a factory reset so i will be very keen to see how it goes now.

It is perhaps a coincidence. I also started a longer print (22h) via Octoprint and left the SD card in the printer LCD. The print stopped (not resetting) after about 2 hours (temperatures remained constant, but the axes did not move). After I checked everything I could see that the SD card is defective. After removing the card and restarting the print, the thing is running now. The SD card has lasted 3 years, but now it is neither recognized by the printer nor by Windows. I think that this might have been the triggering moment for the print stop.

Delayed Update- sorry
The print failed by SD card attempt, but I noticed that it reset the exact moment I opened Cura 4.8 and it opened on the i3-mk3s screen. So maybe the program caused this reset so I gave it a rest as well as my frustration and will try again today to see if the factory reset worked.

So Far we have-
Ruled out the SD card - new cards bought and tried still have problem, cards tried in other machines and working on that one
Tried using Cura 4.7 to slice model - Machine restarted randomly
Replaced the LCD screen unit with card reader attached - machine restarted randomly
Tried a test print no filament used with USB not SD card - Print finished 1 day 12hrs
Tried a factory reset - machine restarted but could be due to Cura 4.8 interference 

Next steps
I will try the print again but with the USB cable unplugged to see if that affected the outcome
After this I will try a print via USB only to see if that works

Any attached USB cable nullifies any testing.  The Einsy USB port is just much too sensitive to normal OS "are you there" processes (aka keep alive). Even my PC with a USB cable connected - PC power off or sleeping - will reset the printer randomly.

Update-

Successfully completed a 2 day 3hr print without an issue using cura 4.8 to slice no USB cable attached and a new Sandisc SD Card
Print turned out nice, I will now try a similar length print to make sure it wasn't a fluke.
