Lack of documentation on what settings change in your sliced print when using the percentage adjustment via knob on LCD

Is there documentation somewhere on what exactly is changed in your slicer settings when you use the percentage adjustment via the knob while a print is running?
I am tuning some settings and being able to use that while a print is running would be nice, but I would like to know exactly what it is doing before trying to calculate new slicer settings using the percentage change.

Is it all the speed settings? What about acceleration/jerk? Does retraction speed also fall under what is changed?

Good question. Here is a followup:
If I have settings in Slic3r PE that bump up close to the maximum flow rate (mm^3/s) like can happen on large areas of infill, will increasing the speed exceed the flow rate potentially leading to failed prints?
