Hotend Temperature Falls Below Target on 2nd Layer

My MK3S has been working well for over three years, but today has started to show a problem. The hotend and bed reach target temperature quickly, and the print starts. The first layer of PLA is printed correctly at 220°C. When the second layer starts, the target hotend temperature is set to 210°C so the fan comes on. As expected the hotend temperature begins to fall, but it never stops and continues to fall below the target and continue downward without any attempt to recover until the print aborts on a temperature error. You can see this in the red line on the graph below from OctoPrint.

I am using the latest available firmware 3.11.0, and have run PID calibration which has not improved the situation. As this printer has been reliable for a long time, I assume a part has failed - could anyone advise please?

Are you sure you do not have a bad thermistor or broken wire?

Sorry, I should have closed this topic. Problem was isolated to a faulty hotend thermistor.

That is exactly what I thought it had to be.
