G1 Z0.1 command not possible
When enter G1 z0.1 command, lcd still display Z is 0.15
Is that a security feature ?

Not security so much as safety. You can't get the nozzle lower than 0.15mm with move commands. I recall seeing a software endstop message on the serial console while experimenting with this once. There are ways around this if you want to drive the nozzle into the print surface, but this helps prevent inadvertently doing so.

There is a gcode command « M211 S0 » to deactivate endstops, is it working for Prusa ?

And the MK3 has physical end stops, so disabling them buys you nothing.
