Difficult to see on your video, but it looks like the extruder is turning a bit around the x-axis while sensing. That could indicate the nozzle hitting the bed which should not be the case. Check the correct mounting of PINDA vs nozzle. https://help.prusa3d.com/guide/how-to-replace-a-p-i-n-d-a-sensor-mk3s_163386
