Calibrating nozzle temperature

The thermister wires on the nozzle broke so I got a new one.  The prints are now coming out poorly with unevenly deposited layers and stringy. I think the nozzle temperature is the culprit.   Using a temperature probe the temp measures about 1/2 of what it should when measure at the surface of the nozzle.  I can't find where the nozzle temperature is calibrated. 

So how do I calibrate the nozzle temperature?  Is it even possible?

From the error, sounds like the wrong value thermistor.  It is calibrated through the resistance.  If you have an ohmmeter, and you can get a connection on the old resistor, compare the cold resistance, the readings should be very close.
