Stuck Thermistor - How to remove?
So think it's time to replace the hot end, followed the procedure, removed the heater but no matter what I try the thermistor is stuck and I can't complete the procedure to unplug or remove the hot end.
I removed the one screw and tried a to push the thermistor out while the hot end was hot then warm then cold then warm again, no luck, it budged a little but the hex wrench was actually bending.
Any tips on how to remove this thing or is it time to "cut and run" and replace the thermistor anyways?

Thermistors are relatively cheap. If it's stuck, it's stuck.

Yup what I was beginning to think.
Any tips on what parts to get? Clearly the hot end, thermistor, thinking the heat sink as well (it's filthy), etc... But then I wonder if I should just get the replacement part set or the assembled heat end/block for convenience. I'll probably just go with the individual parts but wondering if there are any thoughts?

You might wish to consider getting a new hot end and a thermistor,
replacing the new hot end now, and rebuilding your old one, at your leisure...
Some people have gone for alternative hotends,
the Revo micro, has a different configuration which may prevent this issue happening again....
I don't have a mini myself, so others may offer more direct advice.

I would agree to just buy at least a complete hot end. You then have everything, and if needed you can use it part by part or all at once.
I have what I call a 'crash kit' of parts most likely to fail, such as a hot end, spare belt material, various used and new nozzles, Einsy board, common hex wrenches, nozzle change wrenches, etc.
At the onset of the Great Pandemic I also quickly printed spare ABS parts of the plastic extruder pieces and added them to the kit. When I got the Prusa printer I figured that if I had a meltdown and needed a new extruder part, I could book a few hours on one of the machines at our local makerspace and do it, but the 3d lab was locked up tight for several months at the beginning of the pandemic.

I also agree, replace the hot end parts. Then add a silicone sock. Prusa supplies the parts and detailed instructions how to replace them. Levendig sells the socks. Here is some earlier discussion:

Alternate hot ends are a tradeoff from what I can see here. They may do some things better and some things worse. The Mini itself is a tradeoff, decent performance for a good price point. If you want to modify, you probably should go with a MK3S+ or clone. There are lots more modifications and it seems it is a more forgiving design.
