What's a good workflow for PrusaSlicer that doesn't forget my color setup
PrusaSlicer is wonderful, but I'm doing something wrong.
I spend time entering the filament colors for my MMU3, but they don't stick.I end up re-entering them many times.
What changes the saved colors? What am I doing that I shouldn't? There must be a workflow that lets me set the colors and leave them unchanged until I load new filaments or something.

This is such a great question, really it is, I wish I had time to answer this.
I know its crappy to stop here, especially since I can answer it, but its an extremely involved answer.
and may not be for everyone, but for the very knowledgeable it is.
I may consider this in the future when I have more time.
But great question. hopefully someone else will have time to answer this.

If you're talking about painted colors on a model then its best to do coloring last since things like the cut tool will reset model colors.
If you mean your custom MMU color setup in the filament list then the answer is to set your colors up and then save a custom Printers Setting preset.

No, I'm just talking about keeping the colors of my filaments straight, which spools going to which MMU3 input.
