Two part two extruder print - Only one extruder active

I have a FlashForge Creator Pro 2 IDEX printer, and I'm trying to print two small calibration parts, with one extruder assigned to each part.  Number of extruders is set to '2' in printer settings, the MMU option is UNchecked, and extruder colors set to yellow and green.  In the plater view I can assign an extruder to each part, as expected.  However I don't seem to be able to define more than one filament parameter set (color, temperature, etc).

Also, when I try to run the print, only one extruder (T0 - the default) is active, and it tries to print both parts (badly, but that could be another problem).  

Any idea what I'm doing wrong here?
