Standard print settings not using default values

I recently started using PrusaSlicer, coming from Cura, and I have what must be a very simple question:

all standard print profiles (0.20mm SPEED, QUALITY, etc etc) don't come with various parameters following what the software itself considers the "default value".

Example: Only retract when crossing perimeters. Hovering the mouse over the option shows that default value is "true", however the option is not selected by the print profile.

 

I understand that all print profiles are created and checked by the developers team, but why is this?

The hover over defaults are from the original Slic3r and they haven’t been changed which is why they bare no resemblance to the Prusa profiles.
