How to add more entries to the system presets?
The pic shows the presets currently shown for my MK4.
I recall more entries in the past, yet I couldn't locate more in the configuration wizard.
How can I bring the other options back?
Is there a finer option than "0.10 mm fast detail"?

I don't think you can.
Also, less than 0.1mm with a 0.4mm nozzle? All you get is drastically longer print times for no discernible difference.
