How do I sink a print into the bed?

I feel like I used to be able to do this.  I downloaded a model that I like, but it has an 30mm base that I don't need.  Instead of loading up the model in a 3rd party program to edit it, I used to just sink the model down into the bed and it would print only what was above 0.  Is there any way to do that now?  When I try and sink the model into the bed, it just always snaps back to where it was.

Annnnd....I figured it out.  The feature called "Cut" does exactly what I wanted.  I had just never used it before.

 

That's what happens - I struggle with something for a few days, then as soon as I give up and post the question, the answer appears magically.
