Can anyone give me any ideas why my model which looks like this:

Would be sliced like this?

To get any quality advice, screenshots are not very useful. We'd love to see you save your file as a 3mf project from Prusaslicer, then zip compress it (or the forum software will be unhappy), and attach  it to a post here. The 3mf contains the STL model *and* all your settings. This way we can look at it all carefully. 

In the meantime,  my money is on an error in the model. Is there a triangle next to the part name in the parts list?

I managed to fix the issue after I left this request by resetting everything.  Unfortunately, I didn't figure out what I had changed to make this not slice properly.  I left this up because I was hoping someone could just see the results and say, "I know that!"  At this point there is no point in  using up anyone else's time.  Thanks for the reply!

My guess would be you had changed slicer mode to close holes.

Glad you found a fix. Shows how important it is to post the 3mf file. If—as Neophyl suggested—you inadvertently changed slicer modes, this would have been immediately apparent in the 3mf but impossible to deduce (with certainty) from screenshots. Happy printing!!!
