F11 not working
It's always annoyed me that PrusaSlicer always opened in a tiny window after every update, but today I noticed the hint that I could use F11 to make it full screen (I'm running v2.8.0).
I bashed the hell out of the F11 key - it made no difference at all.
Am I doing something wrong? It seems such a normal GUI thing to do.

Same here not working
I can get to it in the menu
Menu -> View -> Fullsceen
But F11 is not working in 2.8

There are several existing issues with 2.8 not accepting various keys in various fields. None of them have been addressed yet.
Why dont you go report this additional one on one of the existing github posts. Such as https://github.com/prusa3d/PrusaSlicer/issues/13043 (many of the duplicates or similar ones have been closed already so I suggest that one)
