What causes this to happen?

 

As a test I printed the 8 minute benchy model that came on my Prusa Core One+ thumb drive. It release from the plate fine but then when I looked at it the keel peeled off. Why did the happen? My plate looked clean before I started it.

It's an 8 minute Benchy. I expect it to have problems. Instead, try a 40 minute Benchy. In PrusaSlicer, right click on the bed, Add Shape -> Gallery -> 3DBenchy then print with 0.20mm STRUCTURAL.

The bonkers Benchy is just that - bonkers; it's a party trick.  There are stupid competitions for ridiculous speed prints that sacrifice everything else for time, this is an example.

Also many remixes of the original Benchy have been posted recently - for diagnostic purposes most are suspect.

The original diagnostic Benchy is a very different torture test for machine settings and you can either follow @hyiger's suggestion above or the purist route by downloading the original from https://www.3dbenchy.com/

The 8 minute benchy can print fairly well, though not so good as a 30 minute version. I'm wondering if it isn't material and maybe humidity dependent. Mine prints well with cheap Buddy3D black PLA and has good layer adhesion, but I can imagine that minor changes in the PLA could trip it up. It gets down to 8 minutes by being on the hairy edge of what you can get away with.

I printed the 8 minute benchy before without problems. I used Polymaker PLA for this one.

Point is that the 8 minute benchy is simply not a practical benchmark for diagnosing issues of any sort. As @Diem rightly points out, it's just a party trick. Also, it is probably tuned specifically for Prusament. Different filament brands will have different behaviors.
