Tips for layer "gaps" on PETG?
I'm having issues with the first part of the layer not quite "sticking"to the layer beneath, which creates a hole/gap in the layer. If I switch from using an "aligned" seam to an "random" seam, this seems to resolve the gap, but leaves more of a bump instead, which doesn't look great in product photos. Anything I can do to get cleaner layer consistency?

I've found that the default filament settings of the Prusa Slicer don't really require a Seam-Gap.
Try to set it to 0 mm, instead of the default 0.15 mm or whatever the default is.
You can even try to use negative gap!

I had no idea that setting existed; I will try that. Thanks!

Normally, there's a blob at the seams, so stopping the extrusion a bit earlier helps a lot. That works nicely with my mk3s, which only has "linear advance".
With the Core One, which has "Pressure Advance" + "Input Shaping", is a lot faster (especially the acceleration) and has a more advanced firmware & extruder in general: that blob isn't really happening.
So using the same gap settings can create a real gap now, instead of countering the build up at the seams. I switched the gap to the opposite value for some parts (not sure if the standard value is + or -..), to rather have a little built up, instead of the seam weakening the walls with a thinner spot.
Depends on the nozzle, temperature and the filament though.
