Is there a way to change the time on the CORE One?
Mine appears to be locked into a time zone in Europe. I can see in the settings where I can set some daylight savings time offsets and 12 or 24 hour options, but nothing that lets me set the time. Am I missing something?

In the LCD Menu, go to Settings>Language and Time>Time Zone Hour Offset and set it to your time zone

I am curious why is this restriction even in place, to only set the time if online. What happened to setting the actual time on the machine and only adjust if online?
I do not buy a lot of otherwise cool products just because they force you the set-up over the mobile app or online.
On top of it, it is even more strange why once connected to a WIFI network, firewall-ed from internet, that provides the NTP server over DHCP and an accessible running NTP server - that is ignored. The machine does not even try to call the NTP server if "not online". What is this "online" supposed to mean anyway? Ability to call home? What happened to "we never force you to connect to network"? 🙂

At the risk of being a smart****, the NTP from DHCP can be enable on ESP with a single line of code before nableing the ntp service like this:
sntp_servermode_dhcp(1);
Maybe a quick fix with the next FW update? 🙂

You're not forced to connect to their network. Connecting your printer to your wifi does not connect it to Prusa servers and is only local to your network. You can then use Prusa Link, not Prusa Connect and you can send files locally over your wifi.
If you don't even want to do that just use the USB drive. The time on the printer really serves no function when offline other than estimating the finished print time.

This was the solution. Can be done from the printer without needing to connect via the Link / Connect services.

When I go to Settings > Language and Time > Time Zone Hour Offset, there is no option to change the time zone hour, as it remains set to 1 hour. I do see the color of the number 1 change to red, but nothing else changes. I tried using the Prusa iOS App, but saw no way to do it there either.

In the time zone hour offset, change it to 180 or 240 whatever gives you your time.
