I'm printing a racing wheel housing in pla, but the edges curl up pretty bad so I'm printing it on a 3/8" petg raft.  It needed support anyway so I'm just adding a little extra.  The supports don't go up far, so I want to swap extruder 2 over to PLA for some engraved lettering.  After the supports are done, but before the engraving starts, I can add the manual color change, but it will be stringy at 240c.  What's the custom g-code to set extruder #2 temp to 210c?

If I am getting you correctly you have no MMU? You can add a virtual extruder and change the extruder for the supports. You can adapt the settings shown in my guide

In short: Use your own PETG material setting, change the marks "soluble", use the adjusted material for supports, in your case: change the bed temperature in your PLA profile to PETG temperature, purge enough!

The steps with MMU or virtual extruders are the same. You only have to change the filament by hand.

You could also manually set the new temperature as custom G-code "gcode after color change" in the "machine settings" but in some cases prusaslicer will add codes later that overwrite the temperature again (I had this issue with the fan speed that was readjusted on overhangs). Your desired gcode may be: "M104 T2 S215" where 205 has to be adjusted to the temperature you want, T2 is the extruder you want to change temperature and M104 is the change hotend temperature command.

Oh, sorry I did not read in which part of the forum I was and now I can not edit.

Now I think I know whats going on: You have an XL with 2 heads and the first extruder is always in use and the second has to change material. In this case you should go with the gcode but not generally "after filament change".

I think it would be very interesting to see if you could add a third (virtual) extruder to your machine and how it reacts when changing to it.

Thank you for the knowledge.  Adding a virtual extruder is an interesting concept.  I might have to design a test piece that can prove it.  My real part is going to take 12 hours, so I need to test it first.
