Do I still need multiple build plate calibration for XL?
Search results were a bit confusing - if I'm switching between build plates, do I need to set up multiple profiles and calibrate like I did with a mini? The answer seems to be yes but I'm only finding tutorials for older printers.
No need, the probe sequence physically detects the actual surface, not the steel plate underneath.

The tool head calibration (if that's what you're talking about when you say "build plate calibration") is needed so the printer knows how tool heads 2 through 5 are physically located in relation to toolhead 1. Once that's done, you only have to repeat it if you change nozzles, work on one of the extruders, etc., basically stuff that would change the relative geometry of the extruders.
All that is independent of the build plate. Before a print, the printer goes through homing and mesh bed leveling to determine the distance between the first tool head and the sheet. You replace the sheet, it will just do the same thing for the new sheet. No need for any manual intervention or recalibration tool heads.
