Mixing colors

This is my first print after the assembly, and should be a 2 colors sheep (white and black), but during the print the white  filament was mixed with the black one (during wiping), so I printed in 3 different colors with just 2 filaments :D.

Which settings should I change to fix this kind of issue?

Did I assemble something wrong?

Thank you

You need to adjust the purge volumes, this can be done with the button on the right-hand side of Prusaslicer to the right of the infill option (use custom project specific settings). There's also a "Purge Volume Mulitiplier" option under Filament-Advanced. I've set this multiplier to 100% and then adjust the custom specific settings until you are happy (maybe try 200 for black to white).
