Do NOT do live Z adjustment until AFTER the extruder is extruding
If you are calibrating your first layer on a MK3S with a MMU2S you will hang the printer leaving your filament only partly down the tube between the MMU and the extruder. You need to wait until after the extruder has started actually extruding.
clearly a bug, but there seem to be be no end of them. <sigh> I wonder if I'll ever get my MMU working.

I know how you feel. Support is deaf to the issues in the firmware that I saw. It was zig zagging on live z adjustment, in the air, not at the bed. Super weird. Super dumb. All support did was make fun of me, but when I reproduce the issue again (or rather, when it decides to), straight on Youtube it goes.
