OctoPprint, Mk3s, Raspberry Pi 3B+, and LED light

I'm currently running a Raspberry Pi 0 w however I'm finding it to be hit-and-miss with stability & connectivity when a USB camera (Logitech C270) is connected.

I'm considering purchasing the Raspberry Pi 3 B+ following this guide and also using this enclosure:

Couple questions:

1) Is this guide the best and proven way to approach this? I'd like to try avoiding running a separate power source for a clean install.

2) The printer is in the garage with lights off at night. I'd like to add an LED light to see from connected Logitech C270 webcam, perhaps something like this. Is there a simpler, cleaner way to hook up a light while using on board power? I plan to run the OctoPrint Anywhere and the Dropbox plugins as well. Again, the Pi 0 w barely runs with just the camera and I found loading any additional plugins such as these two causes it to stop working completely, forcing me to reflash and start from scratch without these plugins.

The ZeroW is absolutely incapable of driving the printer and a camera. The 3B+ will be fine.

I have no experience tapping power from the EINSY, but I would not do it for the 3B+, which needs a beefy power supply.

99.8% of my prints are from octoprint
I ran the pi 0w for 3 days and quickly upgraded to the pi3. I didn't bother going 3+ because there was some issue with stability when it first came out.
As for powering the pi, I use a wall wart for power, but will be testing a buck converter from the mean well PSU upgrade.
Do NOT use the Rambo for power, it's not up to the 2.5A task. Period.
You can make a cable that connects the pi3 exactly like the zero would be, but you MUST NOT connect the 5V pin. However YOU MUST connect the ground pin. It is the data reference pin and communications between the pi and Rambo will fail.
I may make a post about this mod on my web page, and include the buck mod if i use it. If interested I'll post a link once it's done.
IMO octoprint is a vital part of my printer if only for monitoring. Direct connection leaves the USB available and I have an old netbook permanently connected to it for remote upgrades via VNC.
