changing nozzle size
when creating a 0.30 nozzle profile on Slic3r do I need to make any changes other than in Printer Settings>Extruder> nozzle size and layer height min/max?

Yes, you need a new print setting with adjusted settings for "Print Settings -> Advanced -> Extrusion width".
