Just got off the chat with a prusa rep, they recommended following steps 5-16 here. I have no business doing anything other than modelling and slicing so I will just be flashing 3.11, but I wanted to post this in case anyone else could use this info.
Worked this out. Doesn't work on 3.10 or 3.12.1 firmware, works fine on 3.11. Leaving this here in case anyone else has the same issue.

Just got bit by the same problem just now: PID calibration heats up to ~60 degC, then drops the target to 0 and just sits there. Already feared I'd fat fingered something during assembly...
I flashed the E3D specific firmware (E3DREVO_fw...) and the thermal calibration passed. No printing issues so far.
Note there is a version of the firmware for the 'regular' and 'high flow' variant of the heater, so if you have added the High Flow Hotside (60W) you need to pick that variant.
I made super sure to use the revo-specific firmware and had no joy. I even went back and gave it another shot after successfully doing the PID on 3.11 -- again, same problem.

Interestingly, I just tried the Trianglelabs ceramic heatblock on my MK3S+ and got the exact same errors that everyone is getting in this thread. I put back in the stock one but curious if these same steps would help to resolve my issue.

Same thing here. Unable to update or downgrade. Currently on 3.13.2-RC1

I forgot to update this thread, but I also had issues with the 3.11 calc as I would hit the max temp regularly.
I was able to follow the few steps I linked to disable the thermal model, turns out it was not too difficult. Upgraded to 3.13.0-6873, disabled the thermal model and my i3mks+ works like a charm now, I’ve been almost non-stop printing for the last month. The temp fluctuates occasionally, 1-3 C at most, but my PID calibration is pretty accurate now and I no longer get max temp errors.

Same problem still on 3.13.3.
If I rollback to 3.11 and PID tune etc, am I then stuck on 3.11? Or once tuned, can I update firmware to most recent?

I did. Here was the solution E3D provided. I emailed and got the same response as in this issue. Using the provided Gcode fixed the problem.

I can still confirm that it is not working on the latest firmware of 3.14 but does still work on 3.11. Prusa please fix this or let the end user know.

The same here. Prusa is struggeling a lot. Since more than a year (FW 3.13) they say the problem is solved. But it's not!!
