Tips on Printing with Ultem?
I would like to buy the PT100 or a type K Thermocouple with amplifier to allow the higher print temp with my MK3
I will also enclose this unit.
Is this pretty straight forward? Any readily available guides?

Not so easy, I'm afraid. You should read this: https://ntrs.nasa.gov/archive/nasa/casi.ntrs.nasa.gov/20170000214.pdf
They converted a Lulzbot to print Ultem - but pretty major changes were required.
The bed temp needs to be >160C - which will kill the bed magnets on the MK3.
You need to print in an enclosure at >60C - which will kill the steppers(unless actively cooled). I think that, with a MK3, the best you can do easily is PC or CF-Nylon. I may be wrong, as I'm brand new to 3d printing - but I had the same desire when I started reading up on what's possible.
