I do it all the time.
If you have a 100 hour print you can't babysit the printer the whole time

Like anything with a heating element, (especially things you assemble yourself) I find it’s wise to keep an eye on it for the first few uses, until it gets your confidence. Once the, for lack of a less ironic term, “burn in period” is completed to your satisfaction, then do what you like.

When someone asks you if you're a god, you say, "YES!"

I would say, like any heating element there is always as risk. Prusa's have a lot of protection built in and I trust them a lot more then many of the crap Chinese printers, not to mention they have been thoroughly tested with long print times (just look at Prusa's print farm which probably runs non stop except for maintenance). With that said, failures can always happen and all it takes is one unique type of failure. ie, you're risk, at least have a Smoke Detector near by but you shouldn't have any issues and people have been doing it for years.

A real story to tell. (not MK3)

I started printing with wood filament few days ago but I forgot to check the print bed first.
The fact was, I left the last printed object behind before starting a new print ! 😮
So the nozzle melted the old object causing a mess of wood filament around the nozzle.
Smoke all over my place. ❗
Fortunately my wife caught the smell and told me and I stopped the printer immediately.
It was lucky that we were at home and were not asleep too.

💡 Lesson to learn: ALWAYS check the printer before printing. DON"T leave the printer alone. (I know it is not always possible as 3D printing can take days). Some monitoring devices might be useful but still not prefect. I hope 3D printer can advance more in terms of saftety.

I have considered purchasing one of these in the past, http://universitylogistics.net/comm_ste_mo.html , it is a smoke detector that will cut power to an electrical outlet if it is triggered. I haven't bought one yet as they are a tad expensive and are a bit of a pain to order online.

That looks awesome, thanks for letting us know about that product

I plan on building an enclosure at some point and putting these in the top - https://stovetopfirestop.com/
