Just for information, I can print cleanly with PETG and a 0.4mm nozzle 0.2mm layer height up to 65 Deg, at 70 I see visible artifacts at 75 it's barely what I would class as acceptable as a surface finish, but is still good enough to support something above (i.e. you cant see the underneath, at 80 it's a mess with loops hanging down, yet it still manages to print ok'ish above, your 15 deg overhang would be my 85, hmmmm.
For bridging, tick the experimental bridging box and set your bridging extrusion ratio down to between 0.8 and 0.85, you will have to run some tests to get the best setting, I will post some test pieces links and examples tomorrow as I am at work now. (Lates)

This is 60 deg on the left, 70 deg in the middle and 80 deg on the right.

And bridging has no drooping, printed at 250 deg, also no stringing, this print is as it was printed, no cleaning up.

They were the right way round on my machine, sorry.

Tall dimension? Now I am worried about strength. That puts the long axis strains tearing apart inter-layer fusion - the weakest direction

Did you ever try printing in this orientation with supports enabled?

This orientation actually came out quite good; at 0.15 the rounded details are of sufficient resolution I'm not concerned they will cause issues, and any overhang/bridging is not on a geometry-critical area so it's okay if it's not beautiful; I think we have a winner!
