Multicoloured 1st and 2nd Layer Prints

I've been using my MK3S+ for over two years and it's never missed a beat, generally printing using Prusa PETG on Textured plate. I've recently been playing with features that are probably 2nd nature to most especially after 2 years such as Threaded Inserts (how have I not used these before?) - but my recent challenge is Multi-coloured 1st/2nd layer prints.
I've read far too many posts and watched too many videos and I've massively confused myself now with what settings I need.
I've created a test model in Fusion360 which is a simple disk with a letter R that will be a different colour to the disk - the letter is 0.4mm and this bit is fine.
In Prusa I've created a new "printer (config)" which I've:
- Set number of extruders to be 2, I've set extruder 1 to be White, and 2 to be Black
- I've added M600 in the Custom G-Code for Tool Change
I've turned off Purge Tower in Print Settings
Assigned the two bodies of my model a different Extruder and I've managed to print my disk (see Image)
During printing I had an annoying tool change right at the beginning but I've seen the code to use global variables and to allow this to be skipped so I am good with that, but the tool/colour changes seemed to be difficult to remove the filament (almost a feeling of getting stuck) and at one point putting the new in it sounded very clicky and wouldn't catch until I really forced it in. Also found the purge of old to new filament left lots on a low height to try grab and remove before it dragged into my model.
Doing more reading, I've come across the "Single Extruder Multi Material" option which I've currently got disabled. If I enable I get the Single Extruder setup options but everything I've read / seen doesn't make sense here - I'm an absolute stock printer (never changed the nozzle, tubes etc) what should my settings be:
Default is:
- Cooling Tube Position - 91.5
- Cooling Tube Length - 5
- Filament Parking Position - 92
- Extra loading Distance - -2
- Purging Volume - 140
Can anyone help / advise me on what I should be doing or is this just the joys of a single Extruder and two colour printing?
