Is there a way to adjust Ztune before printing starts?
A friend has a shear and a notcher and he was nice enough to cut some spring steel printing plates for me in exchange for a simple print. They work great - I use them for PETG since you need a glue stick anyway and I can keep my Prusa plates clean. The problem is they are 0.3mm thinner than my Prusa sheets and it is always a rush to quickly add the 0.3mm back in on Ztune when I switch back to keep from dragging the tip though the print area. Is there a way to access the Ztune menu before a print starts?

If I understand your question, you mean adjusting the live z when switching plates, the answer is kind of.
Before starting a print, you go to settings and scroll down to adjust live z and you can adjust the live z there. it is below the mesh bed level in the settings menu so you have to scroll a bit to get too it.
Once you select a print job and start it, I have been unable to adjust the live z until the mesh bed level completes and the purge line is printing. It makes for some tense moments to get the live z changed at the start of the print 🙂 🙂
If you are switching plates between back to back prints, the best way is to adjust the live z to the new plate right before starting the print or preheating for the next print. I have a routine that I got into to prevent gouging plates or air-printing in these situations.... change plate, change live z , preheat, start print

This might be more than what you're after, but...
If you always use the same thinner sheets for PETG, you could add commands in your filament profile startup gcode to lower the Z setting while printing PETG only. This will require paying attention though.
Simpler might be to just insert a pause until front button pressed to the startup gcode right after mesh bed leveling. I do my final nozzle warmup at this point, so always have a few seconds for last-minute adjustment. Details here if you're interested. Just put an M1 command after the M80 mesh bed level. Put tape on the other side to make it the same height as the prusa. Printer tape?
Or 2 pei stickers on the plate.
