Correct Z Level
Having a difficult time determining the correct nozzle level. I went through the course and it says anywhere between .40-1.40 adjustment is normal. I have my Mk3s+ set at 1.40 z level but not sure if it needs to be more or less. Anyone go past 1.40? Am I looking to see that the bottom of the print is smooth and could I have it too high. Sorry bit confused but have several successful prints just making sure on the Z.

Numbers mean little. They're all dependent on the specifics of your printer and it's assembly. I use this calibration strip to optimize live z: https://www.printables.com/model/105404
Takes only a few minutes, you can try up to 8 different settings in one print, and seeing them next to each other makes it easy to find the best value. Not negative enough, you see gaps between the strands of filament. Too low, you see the typical "waves" or even grooves.
Nothing wrong with -1.400. If you get close to -2.00 I'd move the PINDA higher. Ideally, I aim for around -1.000 as my default because then I have plenty of wiggle room up and down when I swap sheets or nozzles. I had to move mine to 1.850 before I was happy. Should probably move my superpinder but all is working well for now....

I think it's pretty safe to say, that you would be the first ever to get the first layer perfect on the first try... So, if you want opinions/help: post a pic of the first layer calibration result still on the bed. Important: As fuchsr wrote: it's just a number don't worry about what it is, it depends on your printer's PINDA mounting. Fact: if your PINDA is mounted correctly your offset will be between -0.5 and -2.

Mine was like 2.00 when I first got it. As long as your print isn't coming off the bed and you're not scarping the plate you probably have it.

It seems like when you use the 'high precision' included feeler gauge (AKA zip tie) to set the initial Pinda height, the numbers for an optimum print seem to come out in the mid 1000s negative. I've reset this a few times and it always seems to come out in the -1500 to -1600 range for me.
