Sorry sorry, my bad.
I didn't mean not touching the heatblock. I meant the nozzle was not touching the heatbreak. And I know this is the case because it turns out that the original Prusa nozzle was not put back after we did the nozzle change as I had thought. The nozzle that was in could not have possibly been touching the heatbreak because it was not long enough. So we did change back to the Prusa nozzle and that's what's in there now.
I am genuinely grateful for all your advice (@joantabb and @diem especially 🙂 ).
And whilst maybe not for this issue, I am fairly certain I will be back here with a new set of problems in the near future anyway 🙂

Prusa Nozzles have 7.5mm thread,
I believe Mk8 nozzles have 6mm thread...
it's a common error to use the shorter thread on Prusa's
