Printer is constantly jamming with .25 nozzle

I have an i3 MK3S Printer and always use it with a 0.25mm nozzle. It's been a while since I've used it so I put it through a few test prints and everything went fine and detailed. I started printing and they all came out fine at first, it wasn't until the end of the day that it started jamming before it began the last print of the night. 

It's been a few days now and weirdly the issue is still there after numerous cold pulls, nozzle swaps, filament changes, and a PTFE tube change. These prints have a colour change halfway through and the first few attempts to fix it worked, but when the colour change happened, the next filament began jamming and I had to abort the print. (I don't have an MMU attachment).

What happens is the gears manage to guide it down no problem, and it goes in quite far but gets stopped in its tracks. The gears keep going and the filament ends up being ground through (the clicks do happen). There isn't any filament coming out of the other end anymore, even when I heighten the temperature to 280 to purge any leftovers out. I measured how deep the filament goes and it looks like it reaches the heatbreak when it gets stopped.

I fear there's something going on within that heatbreak or heaterblock but I'm not 100% sure...

Is the slicer set to use a 0.25 mm Nozzle?  If the printer or slicer is expecting a 0.4mm nozzle, it will try to push too much filament though too small of an opening.  It will grind and eventually jam.

The slicer file is set for a 0.25 nozzle and the printer has been updated with the 0.25 nozzle setting selected. The files I was using when it happened were all successful earlier that day - it was immediately after I had finished a print and started one of the same file when it began this issue. The only difference that happened was I changed colours around...but I had also been doing that the whole day without issue.

Update: I tried changing the nozzle with a 0.4mm and it works fine. I bought a whole new 0.25mm nozzle and the problem starts again - the same issue happened when I used a 0.25 nozzle on my other printer which is also an i3 MK3S. I can't even load the filament in now! 

Could this be a firmware problem? I recently updated it but since it's been a while, I may have skipped a few versions.
