I have been getting this fault many times and cannot seem to find the solution.  I have replaced the thermistor cartridge at least 4 times and one of those was really for the thermistor being faulty.  I have checked the control board and there doesn't seem to be any solder breaks or weak solder joints. I have found that after the first layer and the fan turns on the temperature drops radically.  I can turn this down by 40% and I can most times make it without an error.  Now I am getting to the point, is it possible the heat cartridge is actually failing to keep up with the cooling and causing the Mintemp error?  Thank you for reading and providing your time to think about and answer. Hi Les, 
Mintemp is usually caused by very low environmental temperatures or  high resistance / disconnection somewhere in the  thermistor circuit.

a failing heater normally  or excessive fan activity can cause  'Thermal runaway!'

Thank you for that input.  I had stated what i did because I print in an enclosure. I had replaced so many sensors I had made all efforts to to ensure the integrity of the control board but nothing seem to help except for reducing the amount of cooling the fan was providing.  Thank you again for the help.

The simplest thing to try if you dont already have one is a silicon heater sock from e3d.  They protect the heater block from the cooling fan and keep the temperature more stable.  They are also relatively cheap.  If you do fit one then be sure to run a PID cycle so the firmware can learn the new characteristics.

Actually that reminds me, did you run a PID calibration after changing your thermistor ?  As you really should. Basically any time you change any of the heater hardware you should run one.  Same for the bed if thats changed at all.
