Hotend Thermistor issue?
Everything appears to heat up as normal, but when moving to print, my hotend temp is fluctuating by 20-30 degrees plus or minus (target temp 215, fluctuates ~180-240) multiple times in a second. The temp also fluctuates if I wiggle the cabling leading into the hot end
Ordered a replacement hotend thermistor, but wanted to see if there were any other thoughts on possible issues

It's either a loose connector or a broken but intermittently touching wire conductor; check all the plugs at the einsy end, pull and reseat.

Socket head screw
There is a tiny socket head screw that holds the thermistor in place. It's possible that has come loose. You will, in any case, need to undo this screw to change out the thermistor.
