Hot End or Thermostat?

So just noticed with this current print the nozzle temps jumping all over the place on the screen.  Up to 220 and all the way down to 170, but the print seems to still look ok so I'm not going to stop it.  Checked Octoprint and it shows the same things.  Since it's looking ok still I'd lean toward the thermostat, but I don't really know.  Is it even worth messing with trying to replace little parts, or should I just order a whole new hotend assembly?

If the hotend goes below 170C.

The extruder will probably stop extruding due to the low temperature extrusion setting in firmware
