Nozzle change and now I have issues!
Newbie here. I was experimenting with a 0.6mm nozzle and I did a nozzle change. I decided that I wanted to go back to the 0.4mm. Before the change, everything was working fine. But now I find that I can't get through a print without some issues, I have done z-test, some test squares and I think I have the z-index correct. But I'm finding it is catching sometimes, and the filament tends to web when picking up and getting caught which it never did before. I didn't change anything else.
Could I have put the nozzle in wrong? Could something have gotten caught up there? After first nozzle change some filament came out of the space between nozzle and heat bed. So I took out the nozzle and put in a clean one. Do I need to open it right up and clean the thing out? I followed the video to a T.
I have also noticed a slight burning smell sometimes. Nothing is leaking, maybe I'm just being overly cautious.

I think I have the z-index correct.
You have recalibrated after changing the nozzle?
Do so even if reinstalling one from before; a quarter turn more or less when fitting is enough to ruin a print.
It's always worth making sure the bed is clean, a common cause of failure.
After first nozzle change some filament came out of the space between nozzle and heat bed.
This is a genuine E3D nozzle? There are cheap nozzles available with the wrong length thread...

PLA sometimes smells of popcorn.

First and foremost: did you follow the E3D-V6 nozzle replacement guide - to the letter? If you didn't read and follow that guide. Do it now. Then come back and ask again if the subsequent reassembly has issues.

And bring photos of the reassemble - especially the nozzle placement in the heater block.

I have done the recalibrating. The bed is always clean, IPA. I bought the nozzle directly from Prusa.

As @diem said, even something as simple as a nozzle change can throw off the Live Z and may require recalibration.
Filament oozing like you described is a tell-tale sign for a wrong hotend assembly.
The nozzle needs to be tightened against the heatbreak, not the heater block.
If correctly assembled there's a gap between the nozzle and the bottom of the heater block.

Yes, I followed the Prusa change guide exactly. I don't mess around.
My heat block was clean but I just tried the Benchy and is went perfectly until about halfway and then something happened and it went wild. ARG.

The filament came out of the bottom between the nozzle and the heat bed. I don't know how. Unless it oozed down while I was changing it.
I have successfully been able to print since without any oozing thankfully. I say successful, but it failed due to other reasons.

Prusa's guide is not nearly as good as E3D's guide; and in my experience will cause you problems unless you ignore parts of it. e.g., your nozzle looks like it is too far into the heater block.
Regarding the Benchy - that's a clear clean adhesion problem.

I was able to finish a benchy to completion tonight with no issues.
