What alignment is good enough?

When I assembled my MK3S I did the best job that I could of getting rid of the frame wobble. I didn't have a stone material counter top or anything so I used my glass top stove for this purpose. Still, I was unable to get rid of about 2 sheets of paper of wobble in the end. I'm not really sure the glass top stove was actually perfectly level so I don't know, I feel like I did what I could.

When my printer was assembled, I calibrated and everything was fine but it did measure slight skew (0.13 or something like that) which it said it corrected. Now, the perfectionist in me is unhappy with this measurement but on the other hand, the perfectionist has never made happy when buying new equipment so I wondering how this actually matters. What's good enough? What difference does it make? Also, is there a way to correct this without disassembling the entire thing?

I'm also wondering how much this absolutely lack of wobble matters during assembly... surely, adding all the rods and other thing must sometimes throw this off every so slightly again, no?

IIRC the software can compensate for up to 0.25 skew so 0.13 is about half way so you should be okay.  My OCD kicks in though so personally I didn't stop until mine was wobble free.

You'll be okay. I did my initial frame assembly for two printers on a machined cast iron saw table, my first printer showed .06 degrees, the second one was .03. Neither had any visible wobble on the table. If it worries you, just print a cube and measure all the sides, if it's square then you don't have a problem, the software has compensated fine.

And remember that adjusting the belts will affect the calibration. They stretch, and thus X and Y size will also vary.
