Could someone post a standard link (or instructions) to take a fully assembled MK3S+, disassemble the standard printhead, and add the MK3S+ multicolor printhead?

If you are aiming to slay the MMU2S beast, be aware this effort is fraught with peril.  The MMU is fickle and requires a LOT of patience.  I've only tamed this beastie(to the extent it can be tamed) recently.

I does a few things:

1. Greatly increases your  obscenity/curse vocabulary.
2.  If you are having any issues without the MMU installed, the MMU will almost certainly make things worse.  
3. If you print with TPU you will, without a great amount of kludging, need to by pass the mmu any time you want to print.  I personally have a second non-mmu printer for printing tpu just because of this.
4. Greatly complicates all considerations related to your printing.   Like normal printing, each model can present challenges and printing with the MMU is no different.  With the upcoming 2.4 PrusaSlicer they've made great leaps in making models printable in multiple colors by painting the part in the prusaslicer.  However, the current 2.3.x doesn't have this in it and thus you have to rely on multi part models to do a single multi material print unless you just want to put two objects on the plate and print them in different colors.  Soluble filaments(the main reason I got the mmu) can't be a little challenging.

Be prepared to be constantly frustrated until you've learned how the MMU works and how to work around it's idiosyncrasies.  

There are a few parts it's HIGHLY recommended you print and use in lieu of the stock prusa mmu parts.

Probably more than anything else, this one.  Print one in PETG before you even start.  And buy the connectors that go along with it

I have no experience with the filament buffer prusa provides but I've not heard good things about it.  I use sunlu filament dryers to essentially accomplish the same task.
