First benchy z offset too low?

Trying to compare with others I’ve seen. I feel my first layer needs more squish?

You could use just a little more squish. Here is what you are aiming for, the lines of

extrusion are nice and tight against the perimeter of the hull. Otherwise, it looks good.

Thank you for the example. Being a newbie it’s hard to know what I’m looking for. 
is it possible to just print the first few layers and stop the print gracefully? Also, is there a way to adjust z-offset while benchy is printing or do I have to run calibration to do it?

You can adjust z-offset during a print but only while the first layer is printing. Also you can cut the model in PrusaSlicer to print as few or as many layers as you wish. And you can also just stop a print from the LCD screen, it doesn't harm the printer.
