How often do you need to Calibrate XYZ?

I printed a couple of small models and a little 10cm high statue.
After that 10cm statue I had to perform the calibration again, nothing was succeeding anymore... the PLA didn't stick to the hotbed anymore either.

After performing the "Calibrate XYZ" again it works fine again.

Will it really be necessary to recalibrate every time I print a bigger model?

You shouldnt have to re calibrate frequently
I generally ony re calibrate if i move the printer or change a nozzle

I'm doing XYZ calibration only if something mechanical have changed or after a bigger maintenance.
Probably your issue is a Z-height adjustment. This is something I'm doing manually during first layer each print (at least visual check). MK2/MK2S PINDA probe is pretty temperature dependent.

I redo the XYZ cal only when I move the printer, disassemble something, or do a firmware upgrade.

When ever you do a firmware upgrade, do a factory reset -> delete all data, then reduce the XYZ cal, and the Live Z adjustments

As Nikolai.r said, it was likely your Live Z that was the issue. Make sure you are adjusting it so you get a good first layer.

My "Live Z adjust" is somewhere between -750 and -820 to get good results.

Does this mean I should lower the PINDA?

if it was over 1.00mm, I would adjust... ,

I have successfully printed at 1.30mm live Z

No prints are successful anymore now, I just get a bunch of plastic wire :'(

I keep doing the calibration to no avail.

Could be bad slicer settings. (First layer)
Could be a dirty bed. Make sure your cleaners are as pure as possible. The 70% IPA and 70% acetones have additives that are great for skin and nails but are horrible for bed adhesion. Clean the bed with pure acetone, and use a paper towel that does not have fregrances or lotions.
Could be a bad live Z setting (but you are working on that).
Model might have too small a contact surface and might need "brim" - see slicer settings.

We would need more insight into what you are doing to give specific things to look at.

I would suggest that when you have repeated errors that you try printing one of the original items you received with the printer. Printing the Prusa panel has worked very well for me because it prints quickly. If it prints properly than it is probably not a problem with the printer but instead your model/slicer settings. Troubleshooting starts with eliminating what is not the problem 💡 .
