According to this interview (in Czech only) with Josef Prusa, they sold 1200 units in first 24 hours. And to date of the interview, they have almost 7000 orders.

Based on order numbers and the restriction for 2 per order, I would guess many of those 7000 were post October.

So I am trying to budget for the customs costs for the Mini, and the spreadsheets aren't super helpful for how much I need to leave.  To clarify, all of my packages come into a main office, who then scan it and hold it until I can collect it.  For those who have already received their Mini's (In the U.S.A., I should specify), did you have to pay extra customs fee's?  And if you are willing to share, how much should I expect to pay?

You should not have to pay anything. The mini is under the amount allowed in by customers so you shouldn't worry. I have been getting packages outside the USA for more than 20 years and have never had to pay any customs charges.

If your package value is under 800 then you don't have to pay any additional customs fees (shipping to US). I had no additional payment for my MK2 kit and had no additional fees for my MK3 kit.

I was at EERF on 10/12 for the announcement of the mini.  I placed the order a couple of hours later.  I just got confirmation that it shipped.  

Christmas is coming early.  😀

Most of the orders that have shipped are from the 12th.  A few from the 13th.

I have ordered on 13th, and mines is shipped already. The courier expects to deliver it tomorrow, and I'm quite pleased with that.

Ordered mine on the 14th, so I was really excited when the two black ones from the 13th were shipped. I ordered a black mini without filament sensor. This will be my first private printer, but I ordered an MK3 for prototypes at work, so I’m familiar with the Prusa printers. 
Really looking forward to receiving my printer and I had no idea that the demand for the printer would be so enormous! 🙂

I just used google translate for the article and regarding the mini, it just states that 1200 were preordered on day one. The 7000 is, from what I can read, the (total) amount of printers they produce per month. 

Might be off on this, maybe someone from Czechia could verify?

1 200 first day, 7 000 pre-orders total for MINI so far. At the beginning of the interview he's saying that back in 2016 when he did first interview with Lupa, they were selling 500 printers a month and their dream was to sell 5 000 printers per month. Now the number varies by month, but average 6-7 thousand printers per month (all printers).
