Can't move Z axis down manually
Hello,
I have my Printer in an enclosure. Depending on the prints, sometime the printhead will be at the top of z-axis. When I'm done with a print, I generally turn off my printer. My issue is that when I want to do a filament change, the printhead goes to the top and due to the enclosure, I don't have a lot of space to pull/insert the filament. When I try to manually move the z-axis using the "move axis" function, often the printer will say that the z-axis is at 0mm when it's at the top and I can't move it any lower. Is there a way to convince the printer to move to less than 0mm (i.e -20mm) so that I can move it down before doing a filament change? Or do I have to do a home function every time before power off?

Use the Auto Home under the control menu. It will reset the XY and Z0 so you can move in Z without smashing into the build sheet.
These are incremental movement machines and have no way of knowing where they are at power up. They default Z to 0 for upward movement only. Setting current location to Z0 when powering on is a safety feature to prevent smashing the head into the build sheet.
