Edit your model. Go to Modal Availability>Club exclusive and/or paid.

There are some restrictions if you have already published a model accidentally as a free model.

Where do you access that menu?  I dont see those options when uploading or editing my hosted models.

It's the Model Availability section. When you create (or edit) a model you **have** to specify whether it's "free" or a "club exclusive/and or paid". Click on "club exclusive and/or paid"

This is all I see when I go to upload a model.  Is there a different method you're referencing?

I believe you have to first set up your store or club first from your account Settings before those options become available.  If you don't have them available then there is no store or club to assign them to is there.

That's true. As OP mentioned seller account I assumed the store was set up.
